I am primarily referring to hydrogenated oils, which are essentially trans fats. However, now that the public has become so concerned with trans fats, and their content is now required under the "Nutrition Facts," there is a new process called interesterification. Interesterified fats are similar to trans fats, but they're not called trans fats so they don't have a special label...yet.
