Is it accurate to judge someone's character by how they treat their inferiors?

Would it be accurate, for instance, to say that a man who is kind and giving to people but goes home and brutally beats his dog *still* isn't a nice person? ...or would it be accurate to say that a date who is consistently nice to you but always rude to the waiter is simply a rude person in general? Personally, I would think that it is. People often reveal their true character when they're dealing with someone who they have no reason to treat with respect.
