I love raw fish.
But I rarely eat it, as I am too paranoid the fish wasn't handled well/not fresh/contains parasites...

Raw fish.
The way you deal with bacteria/parasites is that you freeze it below -40 degrees.
Served chill, not frozen, of course

Sashimi is usually fish, but it doesn't have to be. I've had horse sashimi before.

Also, Sashimi is good. I prefer sushi, though.

"Sashimi" translates roughly to "sliced/cut meat". The only meat that's commonly eaten raw is fish, but you can get sashimi of pretty much anything.
Horse sashimi was okay, a bit chewy though. I'm pretty sure I've seen beef sashimi too.
