How could there be anything "wrong" with it--you're just changing the shape with a mold for it to grow in, that doesn't alter anything about the food except the shape. We trim hdges into shapes we like (whether elaborate scultures or just well-manicured squares), bonsai tree growing is a famous Asian discipline that involves moding the shape of a growing plant, people do things all the time with the way trees grow around things, people trane rose and other types of vines to grow in certain ways and in certain shapes...there's nothing "wrong" with that sort of thing at all.
