That looks gooooood. I don't think I'd be able to easily find an ostrich egg here in the states. But I'll give it go with a dozen or so chicken eggs. Yummy!

i don't like eggs but i love scotch eggs - (well i take the egg bit out and put it on my mums plate!) so i like the idea of all that sausage meat and bread crumbs - maybe i should make my own scotch eggs with the egg in!
