Both spellings are correct, but the two words are different. Cosy is a noun, cozy is an adjective, so you really should spell it both ways depending on what you are trying to say.

I spell it cozy but often pronounce it Koh-CEE with an accent the way my mom does, it's funner that way

One describes a cover one would put over something, like a teapot.
'My mom made me a tea cosy for Christmas.'
The other describes a warm, comfortable feeling.
'The dog is very cozy in his new bed.'
