Right hand. I only use my fork in my left hand when I'm cutting a piece of meat. Then I switch back.

Reversed, as I'm left-handed, but same concept, w/ the switching.
If I'm visualizing what dave's talking about, he holds both his knife and fork throughout his unblessed meal. Here in America, we more traditionally put the knife down.

So do you switch hands after every forkful to cut the next?

I generally do all my cutting, then put the knife down and switch my fork to my dominant hand.

I see. That sort of makes sense. I do think I'd like it, but I can see what you mean.
Is this just in informal settings? Would it be the norm to do it your way at a formal dinner or banquet?

No, other way around. I'd say it's more formal to put down your knife while using your fork. Informally, you could do it however the present company accommodated.
I'm not sure about switching your fork hand, though. I wouldn't be surprised if somewhere out there is an antiquated rule that you *must* use your knife, in particular, but possibly fork also, in a particular hand. To avoid bumping elbows, for example, it might be traditional for everyone to use his or her right hand for the knife, since the elbow is potentially more involved. IDK... It's rare to see people keep both utensils at the ready here.

If I'm only using a fork it's in my right hand.
If I'm using a fork and a knife, the fork is in my left hand and the knife in my right.

Because I am left handed I always use my left hand to hold my fork unless, like IRL already stated, I am cutting something. This leads me to sit always on the corners of tables. No risk of bumping elbows.

Though I shoot any long gun left handed.

yes, Laughie, I believe you're *supposed* to keep the fork in the left and use your knife in right as needed. but lord knows I'm not an etiquette expert.
I do believe switching hands is considered gauche.

Depends entirely on if I'm eating something that requires a knife. In that case, the knife must be in the right hand.
