For example, I think somebody who watches documentaries about quantum theory would be more intelligent than somebody who watches people getting hit in the balls.

Not really. All sorts of odd things can be used for entertainment, and if it's watching stupid television shows, so what. That doesn't mean you couldn't ALSO be interested in more intelligent pasttimes.
I'd say it could be better judged by what you DON'T like.

sometimes i enjoy the deeper/ intellectual shows, but other times i just want to sit back and relax and not have to think so no i dont think it truly reflects a persons intelligence

Entertainment is entertainment, and there's nothing really telling about what a person watches just to get a laugh - but the REASONS they watch can be reflective of their intelligence. Someone who says, for instance, "I watch Fox News 'cause they're the only network that tells the truth!" can be taken to have a double-digit IQ with about a 95% chance of being correct. Someone, on the other hand, who watches (noting the pic for the question) Springer because they just like a mindless chuckle at something ridiculous - well, there's no harm there.

Sure you GAIN knowledge from watching docos and various other television shows, but I don't think it necessarily shows how intelligent you are depending on what shows you choose to watch.

Occasionally yes, but not always.
My mom thinks that the humor on Scrubs is "stupid", but I would say that it is one of my favorite television shows (however, I do not agree with her). I have an IQ in the top 2% of people, so in that case, absolutely not.
I would also like to add that there are many extremely intelligent individuals who sit back and watch shows like Jackass to lament on the declining stupidity of the human race. Just saying
