I would say you would have to be educated to degree level. If you know a few minor facts about science, but have your degree in English, I wouldn't consider you a polymath.
You don't have to have multiple degrees, merely have a knowledge base equal to that of degree level.

The only times I've seen the term used, it refers to people who could be thought of as experts and/or a genius in multiple subject areas, like Francis Galton or Leonardo da Vinci.
I can't imagine theres many of them on YT really (or generally for that matter).

I'll throw Goethe into that category. I highly doubt there's anyone of that intellectual caliber here. But do let me know if you founded a new field of science, write poetry that will still be read and loved a couple hundred years from now, participate in national political debates, and have authored classic screenplay.

For a modern example, by the way, a lot of people cite Hofstadter for his contributions to physics, mathematics, AI, philosophy, and artwork of various sorts (including originating the term ambigram), spends time composing music, and speaks along the lines of eight or so languages (although not all fluently, by his admission).

I add to the field of architectural design by teaching children the basics of the art, so I do add to one field.
I am hoping to become either a teacher or archaeologist by using my language skills.
You are correct that I am not a polymath, but I am trying my best to become one in the near future, just give me some time!

Well it's a lot harder to identify living polymaths. Generally you need a century or two of history to see the real impact of their work and how significant they were.
