Also, this past Christmas, I decided to try the Sparkling Cranberry Gelatin with sugar-free cherry gelatin instead of orange. That was good too. So now for Thanksgiving, I use orange and for Christmas I use cherry.

I"m trying a new recipe today, I think it will turn out well.

Ingredients
Chicken breasts (2)
olive oil
potatoes
carrots
chicken stock
thyme
basil
minced garlic
salt
pepper
dill

marinate chicken in olive oil, pepper, dill, garlic (1/2 tsp), thyme & basil for an hour or so.
marinate potatoes and carrots in oil, salt & dill & garlic

i have a 9x9 pyrex baking dish. i put 1 cup chicken stock in, add chicken, then add potatoes & carrots, cover with foil and bake 50 min @ 350, remove foil and bake for 10 more at 4 to add crisp to potatoes.

3-2-1- Cake

This is a very simple recipe given to me at Weight Watchers. This is the perfect little individual treat and only two Points Plus value for the Weight Watcher.

First take an angel food cake mix and then any other kind of cake mix you want (chocolate, banana, coconut, carrot, spice, lemon, etc) and dump them both into a large Ziploc baggie and shake, shake, shake it all up real good. Now, you have a nice, low-point cake mix. Then here's what you do:

Mix THREE tablespoons of the mix with TWO tablespoons of water and microwave it on high for ONE minute. 3-2-1!! The best thing to use for it is a ramekin, but don't buy them from Dollar Tree. I just found out those aren't microwave save when I made one tonight. It melted a hole in the bottom. you can also make this up in a coffee cup or something, too.

And I tried banana tonite. Yumm-o!

1. Fill a cup 1/3 of the way up with mango.
2. Put in five frozen strawberries.
3. Squeeze the juice out of a lime.
4. Add about as much ice as you did mango.
5. Pour orange juice into the cup until it reaches the top of the ice.
6. Put in one teaspoon of sugar.
7. Dump it all in a blender and blend until there are no more chunks.
8. Pour back into the cup and enjoy the best smoothie known to mankind.

Strawberry Rhubarb Crisp

2 1/2 C rhubarb, in pieces
1/2 C strawberries, sliced
1/2 C sugar
1 Tbsp cornstarch
2 Tbsp orange juice
2/3 C old-fashioned oats
1/2 C brown sugar
5 Tbsp flour
1/4 Tsp cinnamon
1/8 Tsp salt
5 Tbsp butter
5 Tbsp pecans (or walnuts), chopped

Preheat oven to 375 F
Butter an 8 x 8 inch baking pan
In a mixing bowl combine and toss the rhubarb, strawberries, sugar, cornstarch, and orange juice
Transfer mixture to the buttered baking dish
Mix the oats, brown sugar, flour, cinnamon, and salt in a bowl
Cut in the butter with a pastry blender or use your fingers until the mixture becomes coarse crumbs
Mix in chopped nuts and spread over the fruit mixture
Bake until the topping is golden brown and the fruit is bubbling (30-35 minutes)

I gifted it to my sister about a month ago, and now I'm flying by the seat of my pants.
