It's there, I promise.  I noticed that when I uploaded it, but didn't care enough to take the memory card out and start over... just take my work for it. It's there. Also, those limp squiqqly things are SUPPOSED to be wee carrots. They're carrot-cakeballs.

 Yeah... I know they do... Oh well. They serve the purpose of denoting the non-vanilla/chocolate/irishcreme/peanutb utter cakeballs in this assortment.
And WP, I'm using regular icing for the coloured bits- - little bit + food colouring + 5 seconds in the microwave in a sandwich bag, cut off the tip, instant cake decorating set.
Sammy, brilliant idea!!  And yes, they are SO worth it.
Bunny, they take a while because you need to freeze the balls after you mix them- - it's Bake, Cool, Combine, Chill, Roll, Freeze, Dip, Decorate. A LOT of steps. But if you don't try to do it all in one day, it's much easier.

How much frosting are you using? And are you using just a basic cake mix or an ultra moist? And how long do you freeze them for? Do they "thaw" out okay? Id hate to get that condensation on them and have them melt too quickly. DO you let them set in the air, or do you freeze them once coated?

If you freeze the ball, then dip it in the chocolate usually the frozen cake ball will harden the coating pretty fast (actually making a nice crunchy outside shell, but then once they both get room temperature the chocolate gets softer on the outside. they don't need to be chilled or frozen after.
I freeze them overnight. They thaw fine for me, after being coated. i think its helps keep in all the moistness too to thaw after being coated, keeps them fresh.
I use a whole can of frosting, i think too moist a cake would make too mushy a center.
But thats just my input, we'll see what the Queen of Cakeballs says
