My baking tonight looks far better than it tastes. It doesn't taste bad. Just. It doesn't taste like much.
They look cute so far though.

Tomorrow is husbands first day of his summer class. He has a ton of students this semester. I usually make about 24-30 individual baked thingys (cookies, cupcakes), enough for two per student.
This semester he has 30 students and I'm having some issues.

I started out making donut looking things (pics coming)(using my new donut/fancy mini cake pan I want more), from a lime donut recipe. They taste.. too chewy. Overbeat. And not super flavorful. Limey. But. Not sweet enough. So i added some cherry lime icing. Hopefully that helps. I dislike having to taste everything every step. Too much.

So after I taste-tested the overly chewy donut, instead of making another batch (because it only made about 18), I decided to make Lime Bread "donut holes". Basically recipe for lime and coconut bread, coconut omitted, baked in little mini cupcake pans, to kinda look like donut holes. Better. But. I dunno. No pazzaz! I made a lime glaze I'm going to put on those.

Not my best work yall. And this is my first impression with this new batch of students!

Should i bake another thing? Or just.. let it go? I have about... Oh i should count how many I have. 18 pink donut thingys. About 20 donut holes? Is that enough for 30 students? Probably not.

What complimentary 3rd thing should I bake? Stick with lime theme? I bought a lot of limes in preparation. Stray from lime? I'll post pics so far to help.

Im sending in the cookies and the holes. The pink ones LOOK so good. But they don't taste it. I just can't send those.

I think I'm going to get a 6 cupcake tin (my old one rusted, pbth), and one of those above. I can't decide which.
I kinda want a fancy tin with a design at the bottom (top of cupcake). But i didnt see any and I'm not sure what to search.

One time as a kid, i ate a whole bottle of Christmas sprinkles and got sick so that's my deal with sprinkles.

On that bottom one, is the divider removable? That'd be great! And easier to clean.

I MADE SOUP

Noodles, carrots, beans, chicken


Only slightly cheating. Beans and chicken broth from can. Rotisserie chicken. Real carrots!

Looks good!!

If you want to step it up a little for next time, strip the rotisserie chicken of all its meat first, and then use the carcass (plus odds and ends of carrots, some onions, and celery, + whatever herbs you like your chicken noodle soup to taste like) to make stock for your broth. There should be some good recipes for that online, but I personally like to add parsnips to the actual soup, and some turnips to the stock, plus parsley, lemongrass, a little dill, and plenty of fresh garlic.

Chicken noodle soup is great like that, because you can do absolutely whatever you want with it.

I was hungry. That sounded like it would take too long it was a bit of a last minute decision. I had an odd craving for carrots in soup. Which is weird because i don't like carrots. And they didn't taste like i was imagining. The rest was good though. The beans added a nice texture.

I kind of made soup tonight. The instant pot tends towards broth. My brother said to try incorporating corn starch.

The broth does take time, but if you want to plan ahead, you can freeze it pretty much indefinitely!

Were the carrots cooked through? They look fairly large in your pictures.

While this is bumped. Husband has class again tomorrow. I could bake.

Same class as Monday though. Husband doesn't want me to spoil them but i bake for me, they just give my baking a destination.

Itd be something simple.
And i still have the dratton of them problem.

Also, i don't really have an idea of what to make.

I kinda want to make some honemade chocolate bars.
But I'm not sure if i want to go straight candy instead of baked good.

Plus that would be so much chocolate base to use.

Cinnamon sugar. Looks simple to make; one bowl, no rolling out, in and out of oven, then some cinnamon sugar sprinkling.

Plus if they don't come out, i don't feel like I must make something else.

I'm a little tired though, and, have a slight headache.

I tried to bake today- apple cinnamon muffins with toffee centre. I'd been trying to figure out how to do it for months, and finally tried it. The toffee sunk to the bottom
The rest of the muffin still tasted good though

I had that problem too! I made chocolate cupcakes with mint candies in the middle and they sunk to the bottom. So what i did with the second batch was wait until they were half done baking then shoved the candy down into the middle, finished baking. Perfect!

They are SO GOOD
they don't really even need the cinnamon sugar topping.
